Not sure where the old thread went to so I made a new one smile

Here is my mom's friend's recipe for Zuchini Pie smile I tasted it and it taste alot like a custard type pie. Mom leaves hers in a few minutes longer so the crust turns golden brown.

Zuchini Pie

Crust
1 cup flour
1/2 teaspoon baking powder
1/2 cup chopped nuts
1/8 cup buttermilk
1/3 cup melted butter

Blend and press in to pie plate - Bake at 350 for 5 minutes.

Filling

3/4 cup sugar
1/2 cup butter
1 teaspoon vanilla
2 eggs
2 tablespoons flour
1 cup buttermilk
1/2 cup shredded coconut
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup zuchini

Mix on low speed butter and sugar until fluffy.
Beat in eggs and flour.
Add remaining Ingredients and mix well.

Pour in to crust.

Bake at 350 for 20 minutes.
Reduce heat to 300 and bake 20 minutes more or until golden brown.

It's supposedly great for relief of arthritis and joint pain. Only golden raisins work. Put them in a container and pour gin over them. Let them soak for about a week until the gin is absorbed. Then eat 9 or 10 of them a day. You'll be bounding down the basketball court in no time.

Wacky Cake
Sift together in ungreased pan,
3 cups flour
1 teaspoon salt
6 tablespoons cocoa
2 teaspoons baking soda
2 cups sugar

Make 3 holes in ingredients – add 2 teaspoons vanilla, 2 teaspoons vinegar – 10 tablespoons wesson salad oil.
Over whole thing pour 2 cups of water and mix well.
Bake 40 to 45 minutes at 350 degrees.


Wacky Cake Frosting
1 cup milk – 3 tablespoons flour – cook – bring to a boil until thick then cool completely. Add 1/2 cup butter – 1/2 cup shortening – 1 teaspoon vanilla – 1 cup sugar and beat. Ice cake smile

2 cups sugar
1/2 lb. butter (dont double for double recipe)
1 3/4 cups karo syrup (white)
1-14 1/2 ounce unsweetened evaporated milk

place in a sauce pan and cook slowly, stirring constantly with wooden spoon for about
45 min. or until forms medium hard ball (244 degres) remove and add 1 1/2 tbs. vanilla. pour into

buttered 8" by 12" by 1 1/2" pan - when thoroughly cold cut into strips and then individually wrap

in wax paper

** if you double the recipe double everything but the butter.**
** You need a Candy Thermometer for the above recipe **

This is my favorite pasta recipe that has vegetables smile
ANTIPASTO SALAD

1 package (16 ounces) rotini pasta
1 can (15 ounces) garbanzo beans, rinsed and drained
1 package (3-1/2 ounces) sliced pepperoni, halved
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 cup diced sweet red pepper
1/2 cup diced green pepper
4 medium fresh mushrooms, sliced
2 garlic cloves, minced
2 tablespoons minced fresh basil or 2 teaspoons dried basil
2 teaspoons salt
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup olive or vegetable oil
2/3 cup lemon juice
Cook the pasta according to package directions; drain and rinse with cold water. Place in a large salad bowl. Add the next 12 ingredients; mix well. In a jar with tight-fitting lid, shake oil and lemon juice. Pour over salad and toss. Cover and refrigerate 6 hours or overnight. Stir before serving. Yield: 12-16 servings.

Great if you have leftover ham or pork smile


Oriental Hash

Shredded lettuce is tossed with cooked pork and
rice just before serving—deliciously different—

2 tablespoons cooking oil
Dash garlic powder
2 cups cooked rice
3 tablespoons soy sauce
2 well-beaten eggs
2 cups shredded lettuce
1 1/2 cups cubed cooked pork

Heat oil in skillet. Add garlic powder and pork.
Cook till meat is lightly browned. Add cooked
rice and soy sauce. Cook 10 minutes, stirring
occasionally. Mix in' beaten" eggs and cook 1
minute longer, stirring frequently. Remove
from heat. Add shredded lettuce; toss together.
Serve immediately. Makes 6 servings.
