I used to fish alot when I lived in MA but not anymore. The best tasting fish I ever caught was in Pittsfield and was some kind of steelhead or something like that. I forget but it was so damned tasty fried in a pan of lemon juice and butter and pepper.

I've never had fish or seafood any other way. Catch the fish in the afternoon and it was still alive five minutes before being cooked. Then again we used nets, though I once just went out with a fishing pole and caught about nineteen trout. We had a commercial license and a license for the nets so we could catch all we wanted.
My favorite fish is flounder, and I like shrimp. Then again most people around here like drum or rock and they like crabs and clams/oysters. They are good, just I really like flounder and shrimp.
At the right time of year, a plate with some flounder on it sounds good. Add a few shrimp.. Some scallops and a little bit of lobster. And it would only cost a few dollars in gas for the boat ride out there.

I remember the first time I ate flounder because it was so amazingly good.  It isn't as common anymore, especially up here. Everyone wants reef fish, and coral trout and nanagai are definately delicious but sometimes I'd love to try some stuff I enjoyed years ago. If I had the opportunity to eat fresh seafood as much as you can I would start to have salt water flowing through my veins.

The way we cook them the outsides are a little crispy and the inside melts in your mouth. Though I know quite a few people who find scallops too rich, I somewhat one of them. In that case I replace them with clam hearts.. The big sea clams. The hearts are a perfect match for scallops right down to the texture. Just the taste is more bland and which means one can eat more of them.

Scallops are delicious and should never be rubbery. My favourite way to cook them is in tempura batter because you know that with such a light batter that you won't overcook the scallops unless your batter is dark brown to black. Another favourite is to cook them in some white wine, garlic, cream and a few fresh herbs. We bought some barramundi for dinner and I looked for flounder while we were there but they didn't have it.
